Vermicelli Upma


2 Cups Apis vermicelli
2 tbsp refined oil
1 tbsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
2 Green chillies (split lengthwise)
9-10 Curry leaves
1 onion, sliced
1/2 cup carrots, chopped
1/2 cup fresh peas
1/2 cup beans, chopped
1/2 cup tomato puree
1/2 tsp turmeric powder
to taste salt
2 tbsp peanuts, roasted


1. Heat a wok and roast the Apis vermicelli for 3-4 minutes until slightly golden. Pour to a plate and keep aside.
2. Heat oil in the wok and add mustard, cumin seeds and urad dal.
3. Let them frizzle for a minute and add the curry leaves and chillies.
4. Mix for 1-2 minutes and add the onions. Mix well.
5. Add turmeric powder and salt and mix for 1-2 minutes.
6. Then add the vegetables and mix well. Let them cook for 3-4 minutes.
7. Add tomato puree and 2 1/2 cups of water, and bring to a boil.
8. Add vermicelli and mix well.
9. Cover the wok with a lid and let it cook for 5-6 minutes or till the vermicelli is cooked and the water dries up.
10. Check seasoning and transfer the ready vermicelli upma to a serving bowl and garnish with roasted peanuts and fresh green chilli.
11. And the dish is ready to serve immediately.
